Halibut Henry's Happenings

Halibut Henry's has promoted two employees, Jennifer Edenfield, a former Spokane barista, nursing student, and 2-1/2 year employee of Halibut Henry¹s, has been promoted to Manager of this little airport cafe that has served up munchies to the likes of Hillary Swank and Robin Williams. Joining her, former travel office manager, Diann Thaens has been promoted to Assistant Manager.

The promotions have come in response to expanded airport traffic due to the extra Allegiant Air flights, upcoming Delta service, and numerous charter jets dropping in to the Bellingham International Airport for fuel and catering. Halibut Henry's offers everything from sandwiches and espresso to gourmet food and soup to travelers, both at their gift store& cafe in the airport, and through their catering kitchen, also located in the building.

"We can be asked to supply anything from cold sandwiches to fine wine and roses for these private jets and charters," said Edenfield. "The Vegas pilots call all the time to have Ivar¹s Clam Chowder waiting for them on landing, but ninety-percent of the time we don¹t know who¹s on a flight. A secretary just calls us. So proper presentation and perfect food is important every time."

It adds up to a hectic life at the cafe, which also serves as the information center for the airport. Edenfield and Thaens both have extensive customer service backgrounds and enjoy the excitement of people coming and going.

"We really see a slice of life here," said Thaens. "The joy of reunions and the sadness of goodbyes. We use a lot of kleenex."

Halibut Henry's is owned by Vicki Rogers, owner of The Inside Passage Gifts at the Bellingham Cruise Terminal, and co-owner of Pacific Chef in Fairhaven.
