(NC)-This holiday, stay healthy by cooking California style. Stick to lighter recipes that fuse fresh local ingredients with unique California produce such as figs and avocados. Here are some tips on foods that will help you stay light, heart-healthy and vitamin-rich.
Be heart smart - California King salmon is ideal for a healthy diet. In addition to being a good source of polyunsaturated omega-3 fatty acids, it's high in protein, low in saturated fat and cholesterol which are considered heart smart.
Cut out the sugar - why not use fig puree instead, which can act as a sweetener or fat substitute in a variety of recipes. In a blender, puree 250 grams of figs with 1?4 to 1?3 cup of water or fruit juice (naturally sweetened).
To reduce cholesterol intake - substitute rich spreads like mayonnaise or butter with a fresh slice of avocado on sandwiches and toast to reduce your intake of cholesterol, calories, fat, saturated fat, and sodium.
Stock up on leafy greens - instead of steaming your spinach, try sautéing it in a bit of olive oil which will help absorb up to five times as much of the vision-protecting antioxidant beta-carotene.
