Dinner-in-Minutes...Pesto Rice Toss

(NC)-Simple, fast, easy.
The perfect dinner.

Makes: 4 servings

Ingredients
2 cups uncooked Minute Rice Whole Grain Brown Rice 500 mL

1 cup frozen peas, thawed 250 mL

1 cup cubed cooked ham 250 mL

1/4 cup each prepared basil pesto, chopped sun-dried 60 mL

tomatoes and grated Parmesan cheese

2 large tomatoes, sliced 2

1 tbsp extra-virgin olive oil 15 mL

Salt and pepper

Toasted pine nuts (optional)

Lemon rind (optional)

Parmesan cheese (optional)

Preparation
1. Prepare rice according to package directions. Toss hot rice with the peas, ham, pesto, sun-dried tomatoes and Parmesan cheese until well combined.

2. Divide the tomato slices between four serving plates. Drizzle with olive oil and season with salt and pepper.

3. Spoon equal amounts of the rice mixture onto each plate. Garnish with toasted pine nuts, lemon rind and Parmesan (if using). Serve immediately or at room temperature.
