Pita Pizzas

4 6" soft pitas, whole wheat

3 tbsp. (45 ml) extra virgin olive oil

4 oz. (113 g) Silani Omega 3 mozzarella cheese, shredded

3 oz. (85 g) Silani Omega 3 grated parmesan cheese

1/4 cup (62.5 ml) black olives, pitted and diced

2 plum tomatoes, diced

2 baby eggplants, grilled and diced

3 large sprigs fresh basil

Freshly cracked black pepper

Preheat oven to 400F. Brush olive oil over pitas. Sprinkle with half the Silani mozzarella and the grated parmesan. Add the olives, tomatoes and eggplant. Add the remaining mozzarella and parmesan and top with basil and pepper. Bake on bottom rack of oven on a cookie sheet for 8 minutes or until pita is golden. Cut each pizza into 4 triangles and serve warm.
